Courgettes have come into season, so we’ve pulled together a collection of our favourite recipes to help you celebrate these late summer stunners.
Whether you’re using them as a substitute for chips, or simply as a moreish side dish in their own right, you’ll want to give these crispy, cheesy fried courgette sticks a go. For a healthier version with no frying required, try these baked courgette wedges — all of the cheesy goodness in a lighter bite.
We’re also helplessly in love with these courgette and corn fritters, ideal for brunch, lunch or dinner. Stick an egg on top and you’ve got yourself a great veggie meal, or use the fritters as a side for chicken or bacon.
