6 medium courgettes, quartered lengthwise

- Preheat the oven to 180˚C/160˚C fan/gas mark 4. Lightly grease a large baking tray with olive oil.
- In a bowl, combine the Parmesan, basil, thyme, oregano and garlic powder. Add some salt and black pepper.
- Place the courgette wedges onto the prepared baking tray. Carefully brush the wedges with olive oil and sprinkle with the Parmesan mixture.
- Place in the oven and bake for 15 minutes. Towards the end, turn the grill on to high and allow to preheat.
- Place the courgette fingers under the grill for 3-4 minutes until crisp and deep golden brown. Serve immediately.
