Baked parmesan courgette wedges | Easy Food
Serves 6-8
120g Parmesan, grated
½ tsp dried basil
½ tsp dried Thyme
½ tsp dried oregano
¼ tsp garlic powder
Salt and black pepper
6 medium courgettes, quartered lengthwise
2 tbsp olive oil, plus extra for greasing
  1. Preheat the oven to 180˚C/160˚C fan/gas mark 4. Lightly grease a large baking tray with olive oil.
  2. In a bowl, combine the Parmesan, basil, thyme, oregano and garlic powder. Add some salt and black pepper.
  3. Place the courgette wedges onto the prepared baking tray. Carefully brush the wedges with olive oil and sprinkle with the Parmesan mixture.
  4. Place in the oven and bake for 15 minutes. Towards the end, turn the grill on to high and allow to preheat.
  5. Place the courgette fingers under the grill for 3-4 minutes until crisp and deep golden brown. Serve immediately.
