With winter on the way, we’re all about those fuss-free, warming dishes that take mere minutes to pull together. That’s why, this week, we’re sharing some of our go-to midweek dinners that we find ourselves turning to time and time again during these chillier, darker evenings.
MONDAY: Coconut and spinach dhal

For a lighter version of this veggie-friendly dish, use all ricotta and omit the mascarpone; for a richer, creamier lasagne, do the opposite!
SATURDAY: Chicken, bacon and spinach fettuccine alfredo
Nothing beats a nice big bowl of pasta on a cosy Saturday night. This foolproof dish is comfort food at its finest. Make sure to top it with plenty of freshly grated Parmesan and some ground black pepper.
SUNDAY: Chicken in Thai peanut sauce
This low-carb, high-protein chicken dish is bursting with flavour thanks to the grated ginger, crushed garlic cloves, freshly squeezed limes, soy sauce and creamy peanut butter.
