    With winter on the way, we’re all about those fuss-free, warming dishes that take mere minutes to pull together. That’s why, this week, we’re sharing some of our go-to midweek dinners that we find ourselves turning to time and time again during these chillier, darker evenings.

    MONDAY: Coconut and spinach dhal

    Not only is this soothing, mildly spiced dhal a great vegan dinner option, but leftovers make a fantastic healthy lunch during the cold winter months.
