Tips for hosting the perfect afternoon tea:

 

The spread

There aren’t any rules when it comes to what food you serve, though a standard afternoon tea usually comprises sandwiches, cakes, scones or teacakes. However, you could also include pastries, petits-fours or biscuits.

Drinks

As the name suggests, the drink of choice is tea. Offer your guests a variety, such as Earl Grey, peppermint, camomile, fruit, herbal and, of course, English breakfast. Alternatively, why not crack open the fizz and serve up a juice based mimosa?

Sandwiches

The main savoury dish served at an afternoon tea, sandwiches require minimal effort and can be prepared ahead of time. However, only assemble them just before your guests arrive to avoid them going soggy.

Scones

A stalwart of afternoon tea, scones are best eaten on the day and can be whipped up fairly quickly. To save on time, prepare a day or two beforehand and then freeze. On the day, they can be defrosted in the oven on a low temperature. Serve with generous helpings of cream and jam.
