Cauliflower has risen through the ranks of popularity recently — and we’re fine with that! What was once considered a pretty mediocre vegetable, reserved for a Sunday lunch and maybe, if you’re lucky, smothered in a cheese sauce, has now become a celebrity in the food world. Cauliflower has been reborn as a plant-based alternative to classic comfort foods, showing its colours as a diverse vegetable that can be used in a myriad of ways.

Here, we’re sharing some of our own most-loved cauliflower recipes. Whether you’re following a gluten-free diet or cooking for your vegetarian pals, these simple recipes will put a smile on everyone’s face.

1. Cauliflower BologneseCauliflower_Bolognese Easy Food

This delicious meat-free Bolognese is perfect for vegetarians and meat-eaters alike! Not only does this sauce look like a real, classic Bolognese, but it tastes pretty great too. If you’re looking for a hearty yet healthy plate of comfort food, then we highly recommend giving this one a go.

2. Chorizo and peppers with cauliflower rice

Cauliflower rice is a yummy, healthy alternative to rice that will help you increase your daily intake of fruit and veg. Paired with flavourful chorizo and roasted peppers, it’s a match made in heaven! This low-carb dinner is fool-proof.

3. Mediterranean cauliflower pizza

If you’re on a health kick, then why not try this deliciously satisfying cauliflower pizza? Don’t forget, you can always switch out the toppings to your liking; whether it be pepperoni and sweetcorn, ham and pineapple, or simply whatever veg you’ve got in the fridge, your options are endless.

4. Cauliflower piccata

We love the crispy crust on the cauliflower in this dish, and the piquant lemon and caper sauce. If you’re catering to a vegetarian, then this would be a lovely alternative to serve up instead of a steak or a chicken fillet.

5. Vegan Buffalo wings

These faux Buffalo wings are one of our favourite cauliflower dupes to date. They’re incredibly easy to make and pair perfectly with Buffalo sauce. If spicy food isn’t your thing, then add a dipping bowl of sour cream, natural yoghurt or blue cheese dip to cool the ‘wings’ down.

6. Cheesy cauliflower garlic “bread”

Living that gluten-free life? Satisfy those cravings with this deliciously cheesy cauliflower garlic bread — or add tomato sauce and your favourite pizza toppings to turn this into a fantastic gluten-free pizza!
