Leeks are a fantastic Irish ingredient, particularly in the Winter and Spring months. They can take some preparation though, so here’s the Easy Food guide on how to prepare and enjoy this tasty vegetable!
How to prepare leeks:
- Trim off about 2-3cm from each end (the white end with the root and the dark green top).
- Cut the remaining leek into sections about 4cm long. Slice these in half lengthways.
- Place the leek in a bowl or baking dish of cold water and rub the pieces clean, checking between layers for hidden dirt. The dirt will fall to the bottom of the dish while the leek floats.
- Dry roughly with kitchen paper and slice according to the recipe.
