Whether you prefer vinaigrettes or crave something creamier, dressing your summer salads has never been so easy when you can build your own!
Vinaigrette dressing:
1 part acid + 3 parts oil + flavour, to taste
1. Pick one acid:
Dissolve a pinch of salt into 1 part of acid
- Vinegar (white wine, red wine, apple cider, balsamic)
- Citrus (lemon or lime juice)
2. Pick one oil:
Whisk in 3 parts of oil
- Rapeseed
- Olive
- Grapeseed
- Bacon fat
3. Pick a flavour (or two!):
Whisk in your chosen flavour, tasting as you go
- Herbs
- Shallots
- Mustard
- Chilli
- Honey
- Garlic
4. Season with salt and black pepper.
Creamy dressing:
3 parts creamy ingredient + 1 part flavour + liquid to thin
1. Pick one creamy ingredient:
3 parts
- Greek yoghurt
- Crème fraîche
- Sour cream
- Mayo
2. Pick a flavour (or two!):
Whisk in your chosen flavour, tasting as you go:
- Herbs
- Garlic
- Blue cheese
- Spring onions
- Honey
- Mustard
- Anchovies
- Chilli sauce
- Soy sauce
3. Pick one liquid:
- Add liquid to think until the dressing coats a leaf of lettuce
- Lemon or lime juice
- Buttermilk
- Water
4. Season with salt and black pepper
