Maple mustard ham
- Poaching liquid: Water
- Aromatics: Black treacle + cloves + 1 bay leaf + black peppercorns + orange zest
- Glaze: 100g brown sugar + 100g maple syrup + 1 tbsp Dijon mustard
Sticky orange ham
- Poaching liquid: Orange juice
- Aromatics: Black treacle + 1 bay leaf + black peppercorns + orange wedges
- Glaze: 100g brown sugar + 100g orange marmalade + 1/4 tsp ground ginger
Cola ham
- Poaching liquid: Fizzy cola

Teriyaki ham
