2 large eggs
120g plain flour
45g butter, melted, plus extra for frying
- In a large bowl, whisk together all of the ingredients until smooth. Cover and refrigerate for 30 minutes.
- Melt a knob of butter in a non-stick frying pan over a medium-high heat.
- Ladle a little batter into the bottom of the pan, then lift and tilt the pan around so the batter forms an even coating.
- Cook for 1-2 minutes, then flip and cook for another 10 seconds. Transfer to a plate and keep warm in a low oven while you repeat the process with the remaining batter, adding a little extra butter to the pan when necessary.
