Fondant is a fantastic way to decorate cakes – especially at Christmas – and make yours stand out from the crowd. Here’s a few tips on how to get started!
Step 1 Place a cooled cake on a large plate and measure its diameter.
Step 2 Roll out a ball of marzipan on some greaseproof paper lightly sprinkled with cornflour. Make sure that it is large enough to cover the cake and its sides, with extra to trim.
Step 3 Brush the top and sides of the cake with warmed apricot jam so that the marzipan will stick well.
Step 4 Place the marzipan over the top of the cake and mould to the sides, making sure it binds to the cake well. Trim the sides of the cake with a knife.
Step 5 Prepare a layer of white ready-to-roll fondant in the same way as the marzipan, then brush the marzipan with another layer of warmed apricot jam.
Step 6 Place the layer of white fondant on top of the cake and mould to the sides again, binding it with the layer of marzipan. Trim the sides of the cake with a knife.
