Here are three quick and tasty ways to enjoy more vegetables at lunchtime!
Soup it
Even if you don’t have access to a microwave, a Thermos flask filled with soup is a great way to pack extra produce into your work or school lunch. As the days begin to get colder, you’ll be thankful of that warm soup belly, too.
Dip it:
Speaking of dippable foods, choose a veggie-based sauce to add even more fibre and goodness. Think guacamole, homemade tomato salsa, mint and pea dip, beetroot hummus, roasted garlic purée, rocket pesto, roasted carrot dip, or roasted red pepper salsa.
Snack it:
When you’re in need of a quick nibble between meals, turn to veggies. Whether it’s simple crudités with hummus, half an avocado drizzled with balsamic vinegar or hot sauce, or some leftover veggies from last night’s dinner, it’s easy to increase your intake. You could even make your own baked root vegetable crisps for a healthy snack that feels like a treat!
