For the sauce:

To serve:

  1. Heat the oil in a large saucepan over a medium heat. Add the onion, garlic and Italian seasoning and stir for 2-3 minutes.
  2. Add the vegetables, cover with a lid and cook for 20 minutes, stirring occasionally to prevent them from sticking.
  3. Add the tomato purée and stir for two minutes, then pour in the chopped tomatoes and stock. Stir until combined.
  4. Bring to the boil, then reduce the heat and allow to simmer for 10 minutes.
  5. Allow to cool slightly. Use your stick blender to blend the sauce until smooth.
  6. Toss the sauce with some cooked pasta of your choice. Top with some grated Parmesan and some fresh basil, then serve with some garlic bread.
