For the sauce:
To serve:
- Heat the oil in a large saucepan over a medium heat. Add the onion, garlic and Italian seasoning and stir for 2-3 minutes.
- Add the vegetables, cover with a lid and cook for 20 minutes, stirring occasionally to prevent them from sticking.
- Add the tomato purée and stir for two minutes, then pour in the chopped tomatoes and stock. Stir until combined.
- Bring to the boil, then reduce the heat and allow to simmer for 10 minutes.
- Allow to cool slightly. Use your stick blender to blend the sauce until smooth.
- Toss the sauce with some cooked pasta of your choice. Top with some grated Parmesan and some fresh basil, then serve with some garlic bread.
