tomato and lentil salad
Serves 6-8
780g green lentils, drained and rinsed (alternatively you can use puy lentils)
1 red onion, diced
250g cherry tomatoes, halved
1 large bunch of parsley, chopped

For the dressing
1 tsp Dijon mustard
1 tsp wholegrain mustard
1 tbsp maple syrup
100ml extra-virgin olive oil
1 lemon, (juice of)
Salt and black pepper
  1. Take a large bowl and add all the ingredients for your dressing. Whisk together well.
  2. Add the remaining ingredients and season with salt and black pepper. Stir to combine and serve.
