- Preheat the oven to 200 ̊C/180 ̊C fan/gas mark 6.
- On a baking tray, toss your green vegetables with the oil and some salt and pepper. Roast for 10 minutes, then set aside and allow to cool.
- Start layering the salad on a large serving platter. Begin with the washed lettuce leaves, then add the cool roast vegetables, tomatoes, nuts, cheese and croutons.
- Drizzle over your favourite dressing a few minutes before you are ready to eat.
