  1. Preheat the oven to 200 ̊C/180 ̊C fan/gas mark 6.
  2. On a baking tray, toss your green vegetables with the oil and some salt and pepper. Roast for 10 minutes, then set aside and allow to cool.
  3. Start layering the salad on a large serving platter. Begin with the washed lettuce leaves, then add the cool roast vegetables, tomatoes, nuts, cheese and croutons.
  4. Drizzle over your favourite dressing a few minutes before you are ready to eat.
