To serve:

  1. Preheat the oven to 180 ̊C/160 ̊C fan/gas mark 4.
  2. Place the sweet potato on a rimmed baking tray, drizzle with one tablespoon of olive oil and season with salt and pepper. Roast for 15-20 minutes until cooked through.
  3. Remove and allow to cool. In the meantime, heat the remaining oil in a pan over a medium-high heat and cook the onion for 3-4 minutes. Add the garlic and cook for one minute longer.
  4. In a bowl, roughly mash the black beans with a fork. Add the onion and garlic, the roasted sweet potato and the cumin, egg, breadcrumbs and herbs. Mix well and shape into patties. Pan-fry, grill or bake the patties until golden-brown, then serve on toasted burger buns with mayonnaise, lettuce, cucumber, tomatoes and red onion, with potato wedges or chips on the side.

Note: Potato chips can be used as an alternative to Potato wedges, if you wish.
