  1. Preheat the oven to 180˚C/160˚C fan/gas mark 4. Line a large baking tray with non-stick parchment paper. 
  2. Spread the nuts on the tray and toast in the oven for about 8-10 minutes until golden brown. Give them a toss after four minutes and keep a close eye on them as they can burn easily. 
  3. Remove from the oven and add your sweet or savoury additions, tossing to coat You can also split this mix in half and do a mixture of both. 
  4. Allow to cool before packing into a jar or lunch box
