Summer slaw Easy Food
Serves 6
¼ White cabbage
¼ red cabbage
2 medium carrots, peeled and grated
5 tbsp good mayonnaise, (preferably homemade)
2 spring onions, finely chopped
Salt and black pepper

To serve:
Fresh parsley, chopped
Toasted seeds
  1. Cut the woody core from the cabbage quarters and then shred them as finely as you can (use the grater attachment on your food processor if you have one).
  2. Squeeze out any excess liquid from the vegetables, then tip into a bowl and add the spring onions.
  3. Add the mayonnaise and toss together, then season well.
  4. Top with herbs and seeds, if desired, then serve immediately or store in the fridge until picnic time.
