Spread the mixed leaves out on two serving plates. Top with the sliced strawberries and clementine wedges, then sprinkle over the cranberries and pistachios. In a jug, whisk together all of the ingredients for the dressing until just combined. Season to taste. Drizzle the dressing over the salad and top with the crumbled goat’s cheese.
