One-bowl oaty biscuits

Makes 12

200ml unsweetened apple sauce
60g coconut oil, melted
3 tbsp honey
90g wholemeal flour
80g oats
150g mixed dried fruits
60g sliced almonds
1½ tbsp ground flaxseed
1 tbsp chia seeds
½ tsp bicarbonate of soda
Pinch of salt

  1. Preheat the oven to 180˚C/160˚C fan/gas mark 4 and line a baking tray with parchment paper.
  2. Stir together the applesauce, coconut oil and honey in a large bowl until combined.
  3. Stir in the remaining ingredients until incorporated.
  4. Scoop heaped tablespoon-sized balls of the dough onto the tray, then flatten the tops slightly. Bake for 11-13 minutes until golden brown.
