200ml unsweetened apple sauce
60g coconut oil, melted
3 tbsp honey
90g wholemeal flour
150g mixed dried fruits
60g sliced almonds
1½ tbsp ground flaxseed
1 tbsp chia seeds
½ tsp bicarbonate of soda
Pinch of salt
- Preheat the oven to 180˚C/160˚C fan/gas mark 4 and line a baking tray with parchment paper.
- Stir together the applesauce, coconut oil and honey in a large bowl until combined.
- Stir in the remaining ingredients until incorporated.
- Scoop heaped tablespoon-sized balls of the dough onto the tray, then flatten the tops slightly. Bake for 11-13 minutes until golden brown.
