- Place the dates in a bowl, cover with warm water and allow to soak for 5-6 minutes. Drain well.
- Combine the dates with the remaining ingredients in a food processor. Whizz until a soft dough forms, adding a splash of water (if needed) to combine.
- Form the dough into bite-sized balls (or bars). Roll in coconut, if desired. Store in the fridge or freezer.
