Hot cross buns

Makes 12 

 

500g strong flour, plus extra for dusting
55g caster sugar
2 tsp mixed spice
½ tsp cinnamon
170g sultanas
2 tbsp mixed peel
Zest of 1 lemon
1 x 7g dried yeast
½ tsp salt
50g butter
275ml milk
1 egg
Vegetable oil, for greasing

 

For the topping:
2 tbsp plain flour
3 tbsp golden syrup

 

 

13.For the topping, whisk the flour with 100ml water to form a paste,
then add to a piping bag.
14. When the buns have risen, pipe a cross on each bun. Bake for 15-
20 minutes until pale golden-brown, rotating the baking tray halfway
through.
15. Melt the golden syrup in a pan. While the buns are still warm, brush
the buns with a little syrup before setting aside to cool on a wire rack.
