To serve:

  1. In a blender, combine the strawberries, sugar and lemon juice. Whizz until smooth, then pour through a sieve into a jug to remove any bits.
  2. Pour in the sparkling water and stir gently to combine.
  3. Add sliced strawberries, mint and sliced lemons. Serve chilled.
