Breakfast chips

breakfast chips
Serves 1-2
Oven chips
2 tsp vegetable oil
100g bacon lardons
1-2 eggs
1/2 avocado, chopped
handful of Cherry tomatoes, halved
Salt and pepper
Parsley, chopped

On the side
Tomato relish
  1. Cook oven chips according to package instructions.
  2. Heat vegetable oil in a pan over medium head and cook bacon lardons for 5-6 minutes until crisp.
  3. Use a slotted spoon to transfer the lardons to a tray lined with kitchen paper, reserving the fat in the pan. In the same pan over a medium heat, fry 1-2 eggs until the whites are cooked but the yolks are still runny, or until cooked to your liking.
  4. Arrange the chips on a plate. Sprinkle over the crispy bacon, avocado and cherry tomatoes. Top with the fried egg(s), season with salt and pepper and sprinkle parsley over.
  5. Serve with a side of tomato relish.
