the wild garlic mayonnaise

Makes 4 tablespoons (easily doubled)


Small handful of wild garlic leaves

4 tbsp mayonnaise

Black pepper

Fresh parsley (optional)

Squeeze of lemon juice (optional)


  1. Combine all of the ingredients in a small blender and blitz for one minute. If you don’t have a blender, you can finely chop the wild garlic and stir into the mayonnaise with some black pepper.
  2. Add parsley and/or lemon juice to taste, if desired.
  3. Store in the fridge for up to five days.
