Veggie sausage and apple tray bake
Serves 4
1 butternut squash, peeled and cubed
2 red apples, cut into wedges
4 garlic cloves
2 tsp rosemary, chopped
8 veggie sausages

For the glaze:
2 tbsp olive oil
1 tbsp cider vinegar
2 tsp honey
2 tsp wholegrain mustard

To serve:
50g feta cheese
  1. Preheat the oven to 220 ̊C/200 ̊C fan/gas mark 7.
  2. In a roasting tray, add the squash, apples, garlic and rosemary.
  3. Whisk all of the glaze ingredients together in a bowl. Season well, then pour into the roasting dish and toss to coat the vegetables.
  4. Roast the tray for 25 minutes, tossing the vegetables halfway through.
  5. Add the veggie sausages to the dish and roast for a further 18-20 minutes or until the vegetables are tender and sausages are cooked.
  6. Crumble over the feta and fresh rocket to serve.
