Turkey bagels with cabbage-apple slaw


Serves 4


4 sesame bagels, split

8 slices turkey breast

4-8 tbsp soft herbed goat’s cheese

4 handfuls of mixed leaves


For the slaw:

¼ head green cabbage, thinly sliced

100ml plain Greek yoghurt

Fresh chives, snipped

Salt and black pepper

1 crisp green apple (e.g. Granny Smith), grated


  • In a medium bowl, combine all of the slaw ingredients and set aside.
  • Spread each bagel with some goat’s cheese and add slices of turkey. Top each with a generous dollop of slaw and some mixed leaves.
  • Sandwich each bagel together and slice in half. Serve with the butternut squash soup.
