  1. Bring a large pot of salted water to the boil over a high heat and cook the tortellini according to package instructions.
  2. Drain the tortellini and set aside.
  3. In a large bowl, combine the cooked tortellini, Mozzarella, tomatoes and the pesto. Toss together to coat.
  4. Divide the mixed leaves between two serving plates and top with the pasta salad.
