To serve

  1. Alternate adding the prawns and cherry tomatoes onto the skewers. Drizzle with the oil. 
  2. Heat a griddle pan or barbecue to a medium-high heat. Place the skewers onto the grill and cook for 2-3 minutes on each side until the prawns are cooked and the tomatoes are slightly charred. 
  3. Drizzle over the basil pesto and serve with toasted sourdough and rocket leaves.
