  1. Preheat the oven to 180°C/160°C fan/ gas mark 4.
  2. Add the tomatoes to an oven proof dish and cook in the oven for 10 minutes until they begin to soften.
  3. Mix all the remaining ingredients together and season to taste.
  4. Add the tomatoes and mix well.
  5. Serve on a bed of rocket leaves.

Test Kitchen Tip: This pesto is also great in sandwiches, or as a pasta sauce. Make extra and store it covered in the fridge for up to two days, and another meal is almost taken care of!
