For the dressing
- Add all the ingredients for the dressing to a bowl and stir to combine. Set aside.
- Preheat a barbecue or grill pan to a high heat. Brush the steak with oil and season well. Cook the steak for four minutes on each side for medium-rare, or until cooked to your liking. Set aside for five minutes to rest, then slice against the grain.
- Combine all the remaining ingredients for the salad in a large bowl and add dressing, toss to combine. Add the sliced steak and a handful of chopped roasted peanuts to serve.
