- Combine the pork strips with the soy sauce, marmalade and half of the hoisin sauce in a non-metallic bowl. Set aside to marinate for 10 minutes.
- Heat half of the oil in a wok or large pan over a medium-high heat and stir-fry the pork, working in batches to avoid crowding the pan. Remove from the heat and set aside.
- Warm the tortillas in the microwave for 30 seconds until soft.
- Spread the tortillas with the remaining hoisin sauce, then add the pork in a strip down the centres. Top generously with the cucumber, spring onions and watercress. Sprinkle with sesame seeds, if desired, then cut in half and serve immediately
