  1. Combine the pork strips with the soy sauce, marmalade and half of the hoisin sauce in a non-metallic bowl. Set aside to marinate for 10 minutes.
  2. Heat half of the oil in a wok or large pan over a medium-high heat and stir-fry the pork, working in batches to avoid crowding the pan. Remove from the heat and set aside.
  3. Warm the tortillas in the microwave for 30 seconds until soft.
  4. Spread the tortillas with the remaining hoisin sauce, then add the pork in a strip down the centres. Top generously with the cucumber, spring onions and watercress. Sprinkle with sesame seeds, if desired, then cut in half and serve immediately
