Stewed apple

Serves 2


3 large cooking apples, peeled, cored and chopped
4 tbsp caster or light brown soft sugar (use more or less depending on the sweetness of the apples)
Squeeze of lemon juice
Sprinkle of cinnamon
1 vanilla pod, split open
Splash of water


  1. Put the apples, sugar, lemon juice, cinnamon and vanilla pod in a small pot with a splash of water. Cover and cook over a medium heat for five minutes, or until the apples are tender when pierced with the tip of a knife.
  2. If you prefer a smoother mixture, continue to cook for a further five minutes, uncovered, stirring to break down the apples into a compote.
  3. Store in the fridge for up to five days. Enjoy as a dessert or use as a topping for porridge, yoghurt or pancakes
