- In a pan over medium heat, sweat the onions until translucent and soft, then remove from the pan and set aside.
- Add the bacon to the pan and cook until just golden. Add the chicken and cook for 10-15 minutes, allowing the bacon to finish cooking with the chicken.
- Meanwhile, cook the pasta according to package instructions. In a separate pot, boil the broccoli for 10-15 minutes, until just cooked.
- Once the chicken and bacon have browned, add onions back into the pan, then add the garlic and cook for another three minutes.
- Deglaze the pan with white wine and let it reduce by half, making sure not to let it reduce too much.
- Add the cream and reduce by half again.
- Add the cooked broccoli, pesto and cheese and mix through.
- Drain the pasta and add to the sauce mixture. Top with mangetout and Parmesan.
- Serve with garlic bread.
