- Bring a large pot of salted water to the boil. Add the pasta and cook according to pack instructions.
- In a large pan over medium heat, melt the butter with the olive oil, garlic and nutmeg.
- Add the spinach and cook for about five minutes until the spinach has wilted down to become nice and dark. Season to taste with salt and pepper, then add the cream, the mascarpone and a little of the pasta cooking water to loosen.
- If making for young kids and adults, pour half of the spinach mixture into a bowl and set aside. Blend the other half until smooth and bright green.
- Mix half of the pasta with the blended sauce and serve to the children, meanwhile, mix the rest of the pasta with the unblended sauce and serve to the adults.
- Garnish with Parmesan cheese.
