To serve:
- Combine the cumin, chilli powder, ground coriander and a pinch of salt and pepper in a bowl. Add the steak and toss to coat.
- Heat half of the oil in a large frying pan over a medium-high heat. Add the steak and cook for 2-3 minutes per side until browned. Remove from the pan and set aside.
- Add the rest of the oil to the pan and cook the peppers and most of the onion — reserve a bit of the onion to serve. Cook for 4-5 minutes until soft and slightly crispy.
- Slice the steak, then add it back into the pan, tossing quickly to combine with the peppers, onion and any spices left on the bottom of the pan.
- Spread the sour cream and some mango chutney down the centre of the warm naan.
- Add the steak, peppers and onion, then top with lettuce, cucumber and the reserved red onion. Serve with sweet potato fries.
