To serve

  1. In a bowl, stir together the tomatoes, garlic, chilli powder, fajita spice, coriander and some salt and pepper.
  2. Spread half of the tomato mixture into the bottom of a slow cooker. Add the chicken in a single layer, then the peppers and onion. Spread the remaining tomato mixture on top.
  3. Cover and cook for 6-7 hours on low or for 3-4 hours on high until the chicken is very tender.
  4. Use two large forks to shred the chicken in the slow cooker. Squeeze in the lime juice and stir to combine.
  5. Serve immediately with warm tortillas and your favourite toppings, or allow the mixture to cool and store in the fridge, reheating portions as desired.
