To serve
- In a bowl, stir together the tomatoes, garlic, chilli powder, fajita spice, coriander and some salt and pepper.
- Spread half of the tomato mixture into the bottom of a slow cooker. Add the chicken in a single layer, then the peppers and onion. Spread the remaining tomato mixture on top.
- Cover and cook for 6-7 hours on low or for 3-4 hours on high until the chicken is very tender.
- Use two large forks to shred the chicken in the slow cooker. Squeeze in the lime juice and stir to combine.
- Serve immediately with warm tortillas and your favourite toppings, or allow the mixture to cool and store in the fridge, reheating portions as desired.
