To serve

  1. Soak eight wooden skewers in cold water for 10 minutes. 
  2. Heat a barbecue or griddle pan until almost smoking. 
  3. Push three prawns and three mango pieces onto each skewer. Brush with oil and barbecue or grill for 2-3 minutes each side until cooked through. 
  4. Slide the prawns and mango off each skewer into a lettuce leaf. Add some carrot and sprinkle with the sesame seeds. 
  5. In a bowl, mix the chilli, lime zest and juice, fish sauce and sugar. Serve with the lettuce cups for dipping.
