- In a microwave-safe bowl, beat one egg together with the milk and Parmesan. Add some salt and black pepper.
- Microwave on high until the egg is set, stopping to stir and scramble every 20 seconds or so.
- Pile the cheesy scrambled eggs into the wholemeal pitta with some baby spinach.
