Quick egg pitta

Egg pitta Easy Food
Serves 1
1 egg
splash of Milk
1 tbsp Parmesan, grated
Salt and black pepper
1 wholemeal pitta bread
1small handful of baby spinach

  1. In a microwave-safe bowl, beat one egg together with the milk and Parmesan. Add some salt and black pepper.
  2. Microwave on high until the egg is set, stopping to stir and scramble every 20 seconds or so.
  3. Pile the cheesy scrambled eggs into the wholemeal pitta with some baby spinach.

Per serving: 263kcals, 8.7g fat (3.9g saturated), 28.5g carbs, 2.6g sugars, 16.8g protein, 4.2g fibre, 0.672g sodium

Jazz it up by adding some sliced tomatoes, chopped spring onions or a slice of ham or turkey. If preferred, you could hard-boil a batch of eggs at the start of the week and keep them in the fridge, then slice one into each pitta in place of the scrambled egg.
