Quick Chilli Garlic Noodles

Serves 2
2 portions of noodles
100ml vegetable oil, or any neutral oil
3 cloves garlic minced
1 tsp chilli flakes to taste
1 tsp toasted sesame oil
1 tsp vegetable stock powder, optional
½ tsp salt
½ tsp sugar
½ tsp vinegar
½ tsp chilli powder
2 tbsp soy sauce
2 tbsp sesame seeds
handful of Spring onion tops, chopped
Fresh red chilli, chopped

To serve:
Coriander
Spring onions
Grated cucumber
Grated carrot
Toasted sesame seeds
  1. Cook noodles according to package instructions. Drain and place in a bowl. To serve the noodles cold, rinse under cold water for a few seconds then drain. Otherwise use hot right away.
  2. Add garlic, chili flakes, green onion, soy sauce, vinegar, sugar, salt.
  3. Heat oil in a small pot until smoking hot.
  4. Pour the hot oil over the garlic and chili mix.
  5. Mix well to combine and add to your hot noodles, adding more soy sauce if needed.
  6. Garnish with grated carrot, grated cucumber, chopped coriander and more sesame seeds or chopped peanuts.
  7. Serve and enjoy!
