Prawn mince balls

prawn mince balls
Makes 10-12
16 prawns, raw, with head and shell removed
2 tsp chives, chopped
1 1⁄3 tbsp cornflour
1 tsp salt
  1. Finely chop the prawns and place in a bowl.
  2. Add chives, cornflour, salt and mix well.
  3. Prepare a pan of boiling water. Take a spoonful of the prawn mix and form into a ball (we use two spoons to do this). Drop each ball as you go into the pan. Repeat until all the mixture is used up. Cook for five minutes.

Note: Gluten-free flour can be used as an alternative to cornflour, if you wish.
