16 prawns, raw, with head and shell removed
2 tsp chives, chopped
11⁄3 tbsp cornflour or gluten-free flour
1⁄2 tsp salt
- Finely chop the prawns and place in a bowl.
- Add chives, cornflour, salt and mix well.
- Prepare a pan of boiling water. Take a spoonful of the prawn mix and form into a ball (we use two spoons to do this). Drop each ball as you go into the pan. Repeat until all the mixture is used up. Cook for five minutes.
Make it your own: For a basic soup to put the prawn balls in use the cooking water and add a dash of soy sauce and sliced scallion, mangetout, and very thin julienne carrots towards the end – or simply a handful of fresh spinach. You can reserve the cooking water to make other soup another time. It does not keep very long but makes a great stock.
