  1. Preheat the oven to 180 ̊C/160 ̊C fan/gas mark 4 and brush a baking tray with oil.
  2. In a small jug, whisk the honey, Dijon mustard and seasoning.
  3. In a small bowl, combine the breadcrumbs, parsley and pistachios.
  4. Place the salmon fillets on the prepared tray. Brush with the honey-mustard and top with the breadcrumb mixture, pressing it on to stick.
  5. Bake in the oven for 12-15 minutes until the salmon is cooked through and the topping is golden brown. Serve with brown rice and wilted spinach.
