To serve:

  1. Preheat the oven to 200°C/180°C fan/gas mark 6. Grease a 20 x 25cm non stick oven-proof pan or dish with olive oil.
  2. In a large bowl, whisk the eggs, pesto, salt and pepper together.
  3. Pour the egg mixture into the dish, add the spinach and feta and stir through.
  4. Bake the frittata for 15-20 minutes, or until the egg is set and firm to touch.
  5. Serve the frittata hot, or cold, with your salad of choice.
