To serve:
- Preheat the oven to 200°C/180°C fan/gas mark 6. Grease a 20 x 25cm non stick oven-proof pan or dish with olive oil.
- In a large bowl, whisk the eggs, pesto, salt and pepper together.
- Pour the egg mixture into the dish, add the spinach and feta and stir through.
- Bake the frittata for 15-20 minutes, or until the egg is set and firm to touch.
- Serve the frittata hot, or cold, with your salad of choice.
