Microwave lemon cake

Microwave lemon cake
Serves 4
4 tbsp lemon curd
100g soft butter
100g caster sugar
100g self-raising flour
1 tbsp milk
2 large eggs
Zest of 1 lemon

For the icing
30g icing sugar
1-2 tsp lemon juice
  1. Grease a one litre microwave safe dish with butter. Place the lemon curd in the base.
  2. Beat together the butter, sugar, self- raising flour, milk, eggs and lemon zest then spoon the mixture over the curd.
  3. Microwave, uncovered, for 3 1⁄2 – 4 minutes until risen and cooked through. Leave to cool slightly.
  4. In a bowl, combine the icing sugar and lemon juice to make a runny icing. Drizzle over the sponge before serving.
