For the icing
- Grease a one litre microwave safe dish with butter. Place the lemon curd in the base.
- Beat together the butter, sugar, self- raising flour, milk, eggs and lemon zest then spoon the mixture over the curd.
- Microwave, uncovered, for 3 1⁄2 - 4 minutes until risen and cooked through. Leave to cool slightly.
- In a bowl, combine the icing sugar and lemon juice to make a runny icing. Drizzle over the sponge before serving.
