- In a bowl, combine the flour, caster sugar and cinnamon.
- In a jug, whisk together the melted butter vanilla, and the egg. Pour into the dry ingredients; mix until smooth, then fold in the apple.
- Add a teaspoon of caramel sauce to two microwave-safe mugs or ramekins. Divide the batter between the two mugs. It should half- fill each mug.
- Microwave on high for two minutes, then leave to sit for five minutes to cool slightly. 5 Top with a spoonful of vanilla ice cream and serve.
