  1. In a large bowl whisk together the marinade ingredients. Add the pork chops and cover in the marinade. Cover the bowl in cling film and marinate the chops for two hours in the fridge, or overnight if time allows.
  2. Remove the chops from the marinade and cook on the barbecue on a medium heat, with the vegetables for eight minutes per side, until the chops are seared and cooked through. Allow the chops to rest for five minutes before serving with the grilled veg and your favourite summer salads.
