Makes 180 ml (approx.)
30g fresh mint, finely chopped
2 tbsp sugar
110ml boiling water
25ml white wine vinegar

Put the mint and sugar into a jug or gravy boat. Add the boiling water and vinegar or lemon juice. Set aside to infuse for 5-10 minutes, then serve with Irish lamb.
Note: lemon juice can be used as an alternative to white wine vinegar, if you wish
